Banana bread for the bananas nobody wanted
Every week there are a couple of bananas that go past the point anyone wants to eat them. This is what they turn into. It's not fancy, it doesn't need a mixer, and it's very forgiving if you're a little off on the amounts.
What you need
- 3 very ripe bananas (the spottier the better)
- 75 g melted butter
- 120 g brown sugar
- 1 egg
- 1 tsp vanilla
- 1 tsp baking soda
- a pinch of salt
- 190 g plain flour
- a handful of walnuts or chocolate chips, if you like
How I make it
- Heat the oven to 175 °C and grease a loaf tin.
- Mash the bananas in a big bowl with a fork. Lumps are fine.
- Stir in the melted butter, then the sugar, egg and vanilla.
- Sprinkle the baking soda and salt over the top and mix, then fold in the flour until you can't see dry bits. Don't overdo it.
- Add the nuts or chips, pour into the tin and bake for about 55 minutes, until a skewer comes out clean.
Let it cool in the tin for ten minutes before you turn it out. It's honestly better the next day, toasted, with a bit of butter.
